Ingredients - Serves (Serves 2 - 3)
1 can chickpeas, drained
1 mango, chopped into cubes
1 small red pepper, sliced
1 red chilli, seeded + chopped
3 spring onions, chopped
Handful of fresh basil + coriander
2 tbsp extra virgin olive oil
Juice of ½ lime
Salt + pepper
1 pot of Tideford Organics Smoky Red Pepper + Garlic Pesto
Chickpea + Mango Salad with Smoky Red Pepper + Garlic Pesto Dressing

- Simply mix all of the ingredients together in a bowl.
2. Serve on a plate + top with some of the fresh basil, coriander + a little extra virgin olive oil to create a bright + tasty dish.
