Ingredients

  • 1 can chickpeas, drained
  • 1 mango, chopped into cubes
  • 1 small red pepper, sliced
  • 1 red chilli, seeded + chopped
  • 3 spring onions, chopped
  • Handful of fresh basil + coriander
  • 2 tbsp extra virgin olive oil
  • Juice of ½ lime
  • Salt + pepper

Chickpea+Mango Salad with Smoky Red Pepper+Garlic Pesto Dressing

This bright + vibrant salad with a hint of chilli also stars our Smoky Red Pepper + Garlic Pesto, it’s the perfect summer dish to accompany your next vegan BBQ.

Method

  1. Simply mix all of the ingredients together in a bowl.
  2. Serve on a plate + top with some of the fresh basil, coriander + a little extra virgin olive oil to create a bright + tasty dish.
