- 1 can chickpeas, drained
- 1 mango, chopped into cubes
- 1 small red pepper, sliced
- 1 red chilli, seeded + chopped
- 3 spring onions, chopped
- Handful of fresh basil + coriander
- 2 tbsp extra virgin olive oil
- Juice of ½ lime
- Salt + pepper
- 1 pot of Tideford Organics Smoky Red Pepper + Garlic Pesto
Chickpea+Mango Salad with Smoky Red Pepper+Garlic Pesto Dressing

- Simply mix all of the ingredients together in a bowl.
- Serve on a plate + top with some of the fresh basil, coriander + a little extra virgin olive oil to create a bright + tasty dish.
